The Gioveto wines are a blend of best Merlot ( 20%) , Syrah (20%) and Sangiovese (60%). Gioveto comes from the old name given in Tuscany which was called “SanGioveto”. The vinification  is the what is done for classic red wine with frequent repassing of must over the grape dregs, shorter press and  soaking for the Merlot and Syrah and longer for the Sangiovese. The Gioveto wine is rmellowed in Allier barriques for twelve months and after it’s been bottled  it remains another twelve months for refining before it is sold. It has to be served at 18°C in red wine goblets paying attention to the oxygenation.
